Garlic Lemon Zoodles with Capers and Parmesan + Natura Wines Chardonnay

Some nights I (like everyone) am rushing around to throw together a quick meal. I had just come back from my spin class, and needed to make a throw together meal before the Bachelor started (IMPORTANT). So This quick zoodle dish was just the trick.

Here's What You'll Need:

-1 zucchini, spiralized
-10 cherry tomatoes, sliced in half
-1 tbsp capers
-1-2 cloves of garlic
-1 tbsp lemon juice
-1 tbsp parmesan cheese, shredded
-black pepper to taste
-1 tbsp olive oil

Instructions:

1) Heat up you olive oil in a pan on the stove top. Add in the garlic and cook for about a minute.
2) Add in the zoodles and cook for 3-5 minutes alone.
3) Add in the capers, lemon juice, tomatoes, parmesan, and continue to cook for about a minute.
4) Remove from heat, top with black pepper, serve, and enjoy!

This is literally the perfect quick and light meal. I served mine along some Natura Wines Chardonnay.

Healthy Chicken Parmesan Burgers

Grilled food is without a doubt some of my favorite food. I get so excited when it starts to get warm in the spring because that means that grilling season has finally arrived. Not to say that I won't grill in the winter because, trust me, I will. Over the past couple of months, I've grilled everything from salmon to turkey burgers to kabobs, but I wanted to try something a little different.

I was trying to come up with what I should cook for dinner for my boyfriend and myself. Chicken parm, one of his favorites, instantly came to mind. But I wanted to grill and I wanted to make something healthy. Then it dawned on me - why can't I have all three? How about healthy chicken parm burgers. I even stuffed in some spinach because I love getting in greens wherever I can.

Here's what you'll need:

-1 lb ground chicken
-1/4 cup whole wheat bread crumbs
-1/4 grated parmesan cheese
-1 tsp dried basil
-1 tsp Italian seasoning
-2 cloves garlic, chopped
-1 cup spinach
-1/3 cup tomato/marinara sauce
-1/4 tsp Himalayan sea salt
-1/4 tsp ground black pepper
-1/4 tsp red pepper flakes
-1/3 cup part skim mozzarella, shredded

Instructions:

1) Mix together all ingredients except for the mozzarella in a  bowl.
2) Form mixture into 3 to 4 burger patties depending on the size patties you'd like. We made 3 because we were going bunless.
3) Grill the burgers for about 8 minutes on each side. Watch the burgers closely because cooking times may vary by grill.
4) Add the shredded mozzarella to the tops of the burgers and cook for an additional 2 minutes.
5) Remove the burgers from the grill and serve as desired. You can also add some additional sauce if you'd like.

I also grilled some broccolini (tossed in olive oil, garlic, and red pepper flakes) and whole tomatoes as sides. They were both delicious and highly recommended! The tomatoes were great with the burger and are a good substitute for adding additional sauce.

Mixed Grill Egg Scramble

Coming off the 4th of July holiday weekend, my fridge is packed with barbecue leftovers. Trust me, I'm not complaining. Grilled food is one of my favorites, but most people don't think of it as breakfast. This recipe is here to prove that wrong. I've recently started throwing salmon into my omelets and egg scrambles, and it is not only delicious but also adds in some healthy fats over using the standard breakfast meats like bacon or sausage.

Here's what you'll need:

-1 egg, 2 egg whites (3 eggs total)
-3 oz. of grilled salmon
-1/2 grilled zucchini
-6 cherry tomatoes cut in half
-1/8 cup chopped red onion
-2 tbsp. shredded parmesan cheese
-Black pepper to taste

Instructions:

1) Begin by heating up the red onion in a pan. Let it cook for about 2 minutes alone over medium high heat.
2) Add in the grilled salmon and grilled zucchini. Remember these have been previously cooked, so we just want to reheat them. This takes about 2-3 minutes.
3) Throw in the halved tomatoes and mix around the vegetables for about a minute before tossing in your eggs. Continue to mix the eggs and vegetables to create a scramble until the eggs are cooked fully. After about 3 minutes, toss in 1 tbsp. of parmesan cheese and cook for an additional minute.
4) Remove the egg scramble and serve topping with additional tablespoon of shredded parmesan and black pepper taste.

Feel free to change your egg mixture. Use all egg or all egg whites if you'd like. The 1 egg, 2 egg white mixture is just a personal preference based on taste. Also feel free to play around with whatever leftovers you have from your barbecue. There is no wrong ingredient for an omelet or scramble. Let me know what you think!
