When life gets crazy, it can be convenient to make or grab whatever is easiest and be on your way. A lot of the time, that means some not-so-healthy meal choices packed with unrecognizable ingredients and lots of added sugar. This is why I’m such a huge fan of one-pan meals. Everything goes in the same pan, is cooked at the same time, and there’s minimal clean up. It doesn’t get much easier than that! Another great thing about them is that they can feed the entire family, or if you’re cooking for one, they’re a great way to meal prep for the week.

One of the prime times that a one-pan meal comes in handy for me is at breakfast. You don’t have to wake up an extra hour early every day to cook and can instead just pop your prepped breakfast in the microwave (or eat it cold) and go. That’s why I love these mixed berry baked oats. They require minimal ingredients, most of which you probably already have on hand. And they’re packed with greens from Earth Genius Mixed Berry Smart Greens.

GNC’s Earth Genius line has been a go-to in my home since the line launched last year. Earth Genius is a comprehensive, wholesome line of products that are inspired by nature and crafted by experts. All products in the line are non-GMO, gluten free and made with wholesome ingredients that contain no artificial colors, flavors and sweeteners. Each product is specifically crafted to provide a solution to a real life health concern. They’re super easy to incorporate into your everyday life. I love to add them into delicious recipes like this one, or they’re great just mixed into water, yogurt or your favorite smoothie! Try the different products in the Earth Genius line in store or online: http://bit.ly/2CuvI2s

The product I use in this recipe, the Mixed Berry Smart Greens, is a blend of organic greens, veggies, superfruits, antioxidants, digestive enzymes, organic adaptogenic mushrooms, organic sea greens, and prebiotic Inulin. It tastes absolutely delicious, and I guarantee that nobody will guess your sneaking greens into these oats. They’re sure to beat any store bought insta-oats you find on the shelf.

This post is sponsored by Flahavan’s Irish Oatmeal, however, I am sharing my own thoughts. All opinions are my own.

Oatmeal is one of my favorite ways to start the day. It’s super easy and fast while also filling and nutritious. Plus, you’ll never find yourself getting bored because it’s so versatile. Whether it’s baked or on the stovetop, topped with fruit and nut butter or a savory twist, it’s always a delicious was to get the day going. Savory oats are my personal favorite way to enjoy oatmeal, and today I’m going to share my favorite savory oat recipe with you all!

The most important part of a great oatmeal dish is, well, the oats duh! That probably goes without saying, but it is so, so true! That’s why I use Flahavan’s Irish Oatmeal for this recipe. They’re high-quality, minimally processed, and naturally creamy in texture. Not to mention, Flahavan’s only works with like-minded farmers they know and trust, to select the best quality non-GMO oats, while protecting and sustaining the land. They've even recently launched new packaging highlighting the Irish family farmers that have been helping to bring field to spoon for generations! When it comes to Flahavan’s Irish Oatmeal, you just simply know you’re getting the best! And they truly are the perfect base for some delicious savory mushroom and spinach oats.

I love packing veggies into my breakfasts, and mushrooms and spinach complement Flahavan’s Irish Oatmeal perfectly. Add in some garlic and parmesan for that extra flavor, and we have ourselves a meal! Easy 5-minute Irish Steel Cut Oats with minimal ingredients; it doesn’t get much better!

Here’s what you’ll need:

-1/3 cup Flahavan’s Irish Steel Cut Oatmeal
-2/3 cup milk of choice or water (I usually like to split it half and half)
-4 mushrooms, sliced
-1 handful of fresh spinach (~1 cup)
-1 clove garlic, chopped
-2 tbsp shredded or shaved parmesan
-Salt, pepper, and red pepper flakes (optional) to taste

Instructions:

  1. In a small pot on the stovetop, combine the oats and milk and/or water over medium high heat, and bring to a boil.

  2. Once boiling, turn down the heat to medium, and cook, stirring regularly, for about 5-7 minutes until the liquid absorbs into the oats.

  3. In the meantime, heat up 1 tbsp avocado or olive oil in a pan over medium high heat.

  4. Once hot, add in the sliced mushrooms, and cook for 3-5 minutes.

  5. Mix the garlic and spinach into the pan of mushrooms, and cook for an additional minute or two until the spinach wilts.

  6. Mix the veggies, parmesan, salt, pepper, and red pepper flakes (optional) into the cooked oats until the cheese is fully melted.

  7. Serve, top with your favorite toppings, and enjoy!

My go-to topping is a fried egg. The runny yolk mixed with savory oats just cannot be beat! I also love to add fresh avocado. Play around, and see what works for you! Let me know how you enjoy this recipe in the comments below!

When it comes to healthy eating, I’ve gotten a lot of feedback about it being intimidating. People don’t know where to start, or it’s too time consuming to eat healthy. I get it. Fast food is quick. Eating pre-made frozen meals is convenient. But eating healthy, nutritious meals can be just as easy and convenient!

This is one of the many reasons I’ve come to love GNC’s Earth Genius line. Earth Genius is a comprehensive, wholesome line of products that are inspired by nature and crafted by experts. All products in the line are non-GMO, gluten free and made with wholesome ingredients that contain no artificial colors, flavors and sweeteners. Each product is specifically crafted to provide a solution to a variety of concerns. Through the month of March, you can use this link http://bit.ly/2SJJvaF or head into your local GNC to BOGO 50% off all Earth Genius products, making it the perfect time to try different products in the line.

One of my personal favorite Earth Genius products is their Superfoods Supreme which comes in two flavors, Vanilla Chai and Mixed Berry. It contains 35 superfood ingredients, pea protein and prebiotic and enzyme support. With a wholesome blend of real fruits, veggies, greens and sprouts, it’s an easy way to add nutrition to your daily diet. It’s delicious on its own mixed into water and also a great base for some delicious recipes.

I decided to whip up a super easy, nutritious pancake recipe with the Vanilla Chai flavor. It includes just two other ingredients besides the Superfoods Supreme and takes under 15 minutes to make. Who needs frozen pancakes with ingredients you’ve never heard of when you can have a superfood-packed, nutritious and delicious vanilla chai stack?

Here’s What You’ll Need:

  • 1 scoop Earth Genius Vanilla Chai Superfoods Supreme

  • 1 ripe banana

  • 2 eggs

Instructions:

  1. Mash the banana using a fork or hand mixer.

  2. Add in two whisked eggs and 1 scoop Earth Genius Vanilla Chai Superfoods Supreme, and mix until well combined.

  3. Ladle pancake-sized pours of the mixture onto a preheated, greased pan over medium high heat on the stove top.

  4. Cook for 3-4 minutes until the bottom is cooked, flip and cook an additional 3-4 mins.

  5. Repeat until all the batter is used.

  6. Top your pancakes with your favorite toppings (I suggest nuts, fresh fruit, nut butter and/or maple syrup), and enjoy!

It really doesn’t get easier (or more delicious) than that! Let me know what you think of the recipe in the comments below, and also feel free to share your favorite Earth Genius products and genius recipe swaps.

This post is sponsored by Applegate, however, I am sharing my own thoughts. All opinions are my own.

Applegate has been a go to in my kitchen for years with their natural and organic meats, so you know that I was super excited to learn about their new sliced and shredded cheese line! They are expanding their core values and the high quality standards upheld by their meats to cheese sourcing and production with a transparent, traceable milk pool.

Applegate Naturals® Sliced and Shredded Cheese comes from the milk of pasture-raised cows living in small herds on independent, family-owned farms. These cows are humanely raised and never administered antibiotics or growth hormones.

This cheese is the brand’s first ever to be Non-GMO Project Verified, and it has no added colors, preservatives, or artificial ingredients. There are six new sliced varieties – Medium Cheddar, Provolone, American-Style Colby, Muenster, Pepper Jack, and Mozzarella. Sliced Swiss will be released in 2019. There are also three shredded cheese offerings – an Italian blend, Medium Cheddar, and a Mexican Blend. You’ll be able to find the new cheese lines at selected retailers including Whole Foods Market, Publix, and Sprouts. You can also find more information by visiting www.applegate.com.

To celebrate the launch, I decided to make a fun and delicious recipe using their new sliced mozzarella (and turkey pepperoni). Pizza is always an easy and delicious go to, and breakfast is probably my favorite meal of the day. So I figured why not combine them? I whipped up the perfect, easy pizza frittata for two! It packs in the protein and makes it easy to enjoy guilt-free pizza for breakfast!

Here’s What You’ll Need:

-4 eggs
-1 slice Applegate Sliced Mozzarella
-6 pieces Applegate Turkey Pepperoni
-1/4 cup canned diced tomatoes
-1 cup fresh arugula
-2 cloves fresh garlic, chopped
-3-4 fresh basil leaves, chopped
-1/4 tsp Italian seasoning
-1 tbsp EVOO
-Salt and pepper to taste

Instructions:

1. In a small oven-friendly skillet, heat up the EVOO over medium high heat.
2. Add in the chopped garlic and arugula, and cook for 2-3 minutes until the garlic starts to turn golden and the arugula cooks down.
3. In a bowl, whisk the eggs with the Italian seasoning, salt, and pepper, and pour the mixture over the arugula and garlic.
4. Cover and cook for 3-5 minutes on the stovetop until the sides are cooked (but the center is still raw).
5. Place the pan in the oven on broil, and cook for about three minutes. The eggs should be cooked on the top but still a light yellow.
6. Remove the pan, top the eggs with the diced tomatoes, sliced cheese (feel free to add in an extra slice if you’d like!), and pepperoni.
7. Place the pan back in the oven for another 3 minutes or so until the cheese melts and the eggs begin to turn golden brown.
8. Remove the pan, and top with fresh basil. Slice the frittata in half, serve, and enjoy!

Eggplant Parm Frittata from Whole Foods Market

IMG_1144.jpg

I feel like February often gets a bad wrap. It's dark and cold (if you're in the Northeast like I am), and there doesn't seem to be much going on. But in reality there's lots to celebrate! It happens to be my birthday month, and for everybody else, there's Valentine's Day with that special person in yourself life (or Galentine's Day if you choose to celebrate with your closest gal pals). Plus, Whole Foods Market has an entire other, delicious reason to celebrate!

February is the month of Parmigiano Reggiano at Whole Foods Market, which just so happens to be one of my favorite cheeses! This year marks WFM's 10th anniversary of their traditional Parm Crack event. At this event, Whole Foods hand selects the highest quality wheels of Parmigiano Reggiano from defined creameries in Northern Italy. At 3 pm ET on February 24th, each store will simultaneously crack wheels of cheese, and there will be demonstrations and tastings for customers. If that weren't enough, Parmigiano Reggiano will be on sale from 2/23-2/25 at $5 off per lb.

To celebrate this delicious event and give you a fun way to put that Parmigiano Reggiano to good use, I'm bringing you one of my favorite frittata recipes - eggplant parm.

Here's What You'll Need:

-1/2 cup Parmigiano Reggiano, shredded
-1/2 medium eggplant, sliced
-4 eggs
-1 Roma tomato, sliced
-6 fresh basil leaves (2 chopped, 4 whole)
-2 garlic cloves, chopped
-1 tsp Italian seasoning
-Splash of milk of choice or water (optional)
-Sea salt and pepper to taste
-1 tbsp EVOO

Serves 2

Instructions:

1) Heat up the EVOO in an oven-safe pan on the stove top over medium high heat.
2) Add in the eggplant slices, and cook 2-3 mins/side.
3) Add in the chopped garlic and continue to cook for about 3 minutes.
4) In a bowl, whisk the 4 eggs with a splash of milk, 2 chopped basil leaves, Italian seasoning, sea salt, and black pepper.
5) Spread the tomato slices throughout the pan, layering with the egpplant. Sprinkle the Parmigiano Regianno throughout the layers, and top with the remaining cheese.
6) Pour the egg mixture over the top, and top with the 4 basil leaves.
7) Cook, covered on the stove top, for 3-5 minutes until the sides are cooked.
8) Move the pan to the oven on broil, and cook until golden brown (~5-7 minutes).
9) Remove, and cut the frittata into two halves.
10) Plate, serve with your favorite sides, and enjoy!
