This is without a doubt my go-to easy, quick breakfast. It is not only delicious, but you can throw it together in a couple of minutes.
Here's what you'll need:
-1 piece of sprouted grain toast (I used Ezekiel bread)
-1 cup of fresh spinach (this will cook down a lot)
-1/4 tsp red pepper flakes
-1/4 tsp garlic powder
-dash of salt and pepper
-2 slices of fresh heirloom tomatoes (standard large tomatoes are also fine)
1) Heat up a pan, add cooking spray, and throw in the spinach. Cook for about 1-2 minutes so that the spinach cooks down.
2) Add in the red pepper flakes, garlic, salt, and pepper to the spinach. Cook for an additional 30 seconds. Remove from heat.
3) Add some more cooking spray and add the egg to the pan. Cook the egg (flipping over after a minute or two) so that it is over easy or over medium. Remove from heat.
4) Spread the avocado over the toast. Top with the tomato slices, then spinach, and finally the egg.
