Blueberry Pie Overnight Oats feat. Kura Lifestyle

As this colder weather starts rushing in and we move from September to October, I can't get help but get excited for all of the fall activities. Halloween is now officially less than a month away and Thanksgiving is less than two!

Here in New Jersey it has been rainy and gloomy all week. This kind of weather just makes me want to curl up on the couch and eat comfort food. With comfort food and Thanksgiving on the brain, I started craving some pie. I don't think I need to bake and eat and entire pie for myself, but I decided to incorporate the idea into one of my favorite and easiest breakfasts, overnight oats.

Here's What You'll Need:

-1 cup rolled oats
-1 cup unsweetened almond milk
-1 tbsp chia seeds
-1/2 tsp vanilla
-1 tsp maple syrup
-1 scoop of Kura Lifestyle CORE sweet mint+berries
-1/2 cup fresh blueberries

For the Crumble:

-1 tsp coconut oil
-2 tbsp rolled oats
-1 tbsp coconut flour
-1 tbsp light brown pure cane sugar
-1/4 tsp cinnamon


1) In a Tupperware container or bowl, mix together all of the ingredients minus the blueberries and crumble ingredients. Cover and refrigerate overnight.
2) In a pan, heat up the coconut oil until softened (not completely liquid). 
3) Add in the rolled oats, coconut flour, sugar, and cinnamon, and mix together on low to medium heat for about 2-3 minutes. 
4) In two jars, cups, or bowls, split the overnight oats. Top each with half of the fresh blueberries and half of the crumble.
5) Enjoy!
